Arroz caldo is a Filipino rice porridge simmered with chicken, plenty of ginger and garlic, usually seasoned with fish sauce and topped with boiled egg, scallions and fried garlic. It is the bowl you reach for when someone is under the weather, and it happens to be a wonderful template for babies: soft rice, tender shredded chicken and gentle ginger. The main changes for a baby are leaving out the salt and fish sauce and shredding the chicken finely. Since it is a composite dish, it helps to introduce and log the chicken, rice, egg and ginger separately before serving them together.

6 to 9 monthsSimmer rice with unsalted stock or water, ginger and garlic until very soft, and cook the chicken until it shreds. Blend or mash to a smooth, thick porridge and stir finely shredded chicken through it so there are no lumps. Serve warm, with no added salt or fish sauce.
9 to 12 monthsLeave a little more texture in the porridge and stir through finely shredded chicken and mashed boiled egg. Baby can scoop it with hands or a spoon. Keep it unsalted and skip the fish sauce.
12 months+Serve a thicker, chunkier bowl with soft shredded chicken, egg and a light sprinkle of scallion. You can season a touch more, but keep salt low and taste before adding anything.

Is arroz caldo safe? Choking & prep

Restaurant and traditional arroz caldo leans on fish sauce, stock cubes and salt, and babies under 1 should not have added salt because their kidneys cannot handle it, so make a homemade batch with plain water or unsalted stock.1 Cook the chicken until it is fully done and falls apart, then shred or finely chop it so there are no firm lumps in the porridge.
