First mac and cheese

Two-step stovetop mac with real cheese and none of the packet sodium.

Good to know

Contains wheat and milk: introduce each on its own first.

Boxed mac sauce packets are heavily salted, which is the whole reason to make this one.

Keeps 2 days in the fridge; loosen with warm milk when reheating.

No added salt (a baby's kidneys can only handle a little), no added sugar before age 2, and no honey before age 1 (it can carry a botulism risk). More on salt, sugar, and honey.

Instructions

  1. Cook 1 cup of small pasta shapes until fully soft, a couple of minutes past the package time.
  2. Drain the pasta, saving a splash of the cooking water.
  3. Return the hot pasta to the pan with 2 tbsp whole milk and a small handful of grated cheddar.
  4. Stir off the heat until the cheese melts into a light sauce, loosening with the saved water if it clumps.
  5. Cut the pasta smaller for a baby still working on chewing, and cool before serving.
