Little meatballs

Tender beef meatballs sized and softened for small mouths.

Good to know

A whole meatball is a round choking shape, which is why the last step quarters or mashes every one.

The water and oat flour keep them tender; a splash of milk works too if dairy is already introduced.

Freezes well in the sauce for a month.

No added salt (a baby's kidneys can only handle a little), no added sugar before age 2, and no honey before age 1 (it can carry a botulism risk). More on salt, sugar, and honey.

Instructions

  1. Mix 8 oz ground beef with 3 tbsp oat flour and 3 tbsp water until it holds together.
  2. Roll into small meatballs, about the size of a large marble.
  3. Simmer them in unsalted tomato sauce for 12 to 15 minutes, or bake at 400 F for 12 minutes, until cooked through with no pink inside.
  4. Quarter each meatball, or mash it into the sauce, so no piece is round and firm when it reaches the tray.
