Oat and banana pancakes

Ingredients
- • 1 Ripe banana
- • 1 Egg
- • 4 tbsp Oat flour

The banana is all the sweetness these need; syrup and sugar can wait until age 2.
Keeps 2 days in the fridge and freezes well with parchment between layers.
No added salt (a baby's kidneys can only handle a little), no added sugar before age 2, and no honey before age 1 (it can carry a botulism risk). More on salt, sugar, and honey.
Instructions
- Mash 1 ripe banana until smooth.
- Whisk in 1 egg.
- Stir in 4 tbsp oat flour to make a thick, pourable batter.
- Cook small pancakes in a lightly oiled pan on medium-low, about 2 minutes a side, until set in the middle.
- Cool, then cut into strips a baby can grip, or into small pieces for a baby past the palm-grasp stage.
