Oven chicken nuggets

Contains egg: introduce egg on its own first.

The coating is oat flour rather than breadcrumbs, so there is no wheat unless you swap it.

A hard, crunchy crust is for grown-ups; baked soft is the point here.

Keeps 2 days in the fridge.

No added salt (a baby's kidneys can only handle a little), no added sugar before age 2, and no honey before age 1 (it can carry a botulism risk). More on salt, sugar, and honey.

Instructions

  1. Cut 1 chicken breast into nugget-sized pieces.
  2. Beat 1 egg in a bowl.
  3. Put 4 tbsp oat flour on a plate.
  4. Dip each piece in egg, then roll it in the oat flour.
  5. Bake at 400 F on a lined tray for 14 to 16 minutes, turning once, until cooked through but still soft, not crunchy.
  6. Cut each nugget into strips or small pieces before serving.
