Oven chicken nuggets

Ingredients
- • 1 Chicken breast
- • 1 Egg
- • 4 tbsp Oat flour

The coating is oat flour rather than breadcrumbs, so there is no wheat unless you swap it.
A hard, crunchy crust is for grown-ups; baked soft is the point here.
Keeps 2 days in the fridge.

Instructions
- Cut 1 chicken breast into nugget-sized pieces.
- Beat 1 egg in a bowl.
- Put 4 tbsp oat flour on a plate.
- Dip each piece in egg, then roll it in the oat flour.
- Bake at 400 F on a lined tray for 14 to 16 minutes, turning once, until cooked through but still soft, not crunchy.
- Cut each nugget into strips or small pieces before serving.
