Good to know

Spinach is high in nitrates, so serve this fresh rather than batch-cooking and reheating leftovers.

No added salt (a baby's kidneys can only handle a little), no added sugar before age 2, and no honey before age 1 (it can carry a botulism risk). More on salt, sugar, and honey.

Instructions

  1. Rinse the lentils and simmer in unsalted water until very soft, about 20 minutes.
  2. Wilt the spinach, then blend or mash both smooth with a little cooking water.
