Adai is the protein rich cousin of the dosa. Instead of a fermented rice and urad batter, it uses a coarsely ground mix of several lentils with some rice, ginger, and mild spices, cooked into a thick, satisfying crepe. It is nuttier and more filling than a plain dosa. For a baby, the lentils make it genuinely nourishing, but the traditional green chili and salt need to go. Because it is a blend, introduce the individual dals separately first so you know each one agrees, then offer adai.

Is adai safe? Choking & prep

For a baby, make adai mild, thin, and soft. Skip the green chili and any strong spice, and cook it without added salt, since the NHS advises babies have very little.2 Lentils are not a common allergen and well cooked lentils are low risk when the crepe is soft and cut into manageable strips.1 Cook it fully so the batter is not raw in the middle, and keep the adai thinner and softer than an adult one so it is easy to gum. One thing many people miss: the asafoetida, or hing, used in South Indian tempering is often a compounded powder that contains wheat flour as a filler, so if wheat is not yet introduced or your baby has a wheat allergy, use a gluten free hing or leave it out. Watch for chili and salt from any shared adult batter. Introduce chana, toor, urad, and moong dal separately the first few times so an allergen or upset is easy to trace.
